Cake Dowels: Why You Need Them and How to Use Them Properly

Tall cakes, tiered cakes and modern celebration commissions all look spectacular – but without the right internal structure they can be genuinely risky to transport and to cut. That is exactly why cake dowels are an essential part of professional cake making.

They aren't an optional extra. They are about safety, stability and peace of mind when you hand the cake over.

Why cake dowels matter so much

Cake dowels supporting the tiers of a stacked cake As soon as a cake has more than one tier or a greater height, a considerable weight starts pressing down on the lower layers. Without support, you can end up with:

  • the bottom tier collapsing
  • the cake leaning to one side
  • cracked buttercream
  • layers shifting during transport

Dowels transfer the weight of the upper tiers downwards and spread it evenly. They are what keeps the cake firm and level.

When to use dowels

Dowels are particularly suited to:

  • tiered cakes
  • tall cakes over roughly 15 cm
  • wedding cakes
  • cakes facing a longer journey
  • heavy ganache cakes

With light, low cakes they usually aren't necessary, but the moment you add another tier, you can't manage without them.

What to combine dowels with

Good cake construction doesn't rest on the dowels alone. It is the combination of several elements that counts:

1️⃣ A cake board between the tiers

Every tier should sit on its own rigid board, separating the layers and distributing the pressure.

2️⃣ A central support rod (for taller cakes)

With multi-tiered cakes, this helps to stabilise the whole structure.

3️⃣ A sturdy base board

Ideally a thick one, able to carry the weight of the entire cake.

Get this combination right and the cake will stay stable not just for the photographs, but all the way through transport.

Separator plates as a practical solution

One very practical approach is to use a plastic separator plate together with dowels. A separator plate:

  • separates the individual tiers
  • ensures the weight is spread evenly
  • makes stacking the cake easier
  • simplifies cutting it afterwards

The CakeStar range includes practical sets with the plastic separator plate and dowels already matched together. That way you know the parts fit, and you don't have to piece a solution together yourself.

How to position dowels correctly

The basic rules:

  • push the dowels in vertically and space them evenly
  • they must all be exactly the same height
  • the upper tier must rest directly on the dowels, never on buttercream
  • always test the structure with gentle pressure before the final decorating

Taking care at this stage dramatically reduces the risk of a complaint or damage in transit.

In short

Cake dowels are essential for:

  • stability
  • safety
  • a professional finish
  • trouble-free transport

Combined with a sturdy board and a plastic separator plate, they form the foundation of every tiered cake.

Good construction is the part nobody sees – and it is exactly what holds the whole cake together.
